Come and join Danielle for her Christmas baking class and learn how to make some of the most popular Christmas bakes to enjoy with your friends and family. Danielle will share her top tips and techniques you need to create your very own Christmas bakes at home as well as introducing you to some delicious flavour combinations that work well to make these dishes impressive.
In this traditional Christmas inspired class you will be guided through the steps to create your very own Christmas Pudding and Mince Pies. Danielle will share with you a recipe that has been handed down in her husband’s family. It was originally made by his great grandfather. Of course, it has been adapted (a little) over the years. The puddings are moist, flavoursome and are perfect for serving with brandy butter and/or white sauce.
If you’ve not tasted a mince pie made with home made mincemeat, you are in for a treat! The flavour is rich, well rounded and simply delicious. Everyone who tries one of Danielle’s mince pies made with enriched shortcrust pastry is bowled over. Keep some of those windfall apples, or grate and freeze the apple as apples are a key ingredients.
Both of these traditional treats need time to mature. Both of them can be adapted for those following a gluten free or vegetarian diet. So join me and prepare your Christmas treat in time for Stir up Sunday on 20th November.

This baking class is suitable for novices and enthusiasts to baking thanks to Danielle’s teaching style and classic recipes.
What you’ll need:
We’ll send you the recipes and what you need in advance of your class but have a look below for a standard list of equipment:
- Pressure cooker or large saucepan with lid
- Trivet or bamboo sticks/chopsticks to raise the bowl off the bottom of pan
- Bowl that will hold at least 800 ml water (with a 2cm gap to the rim)
- Baking parchment or greaseproof paper
- Baking foil
- Two mixing bowls
- Grater or food processor with grating attachment
- Lemon juicer and zester (eg microplane or lemon zester)
- Plastic box with lid (4 litres plus) or two boxes to store mincemeat
- If baking the mince pies a 12-hole muffin tin
- Pastry cutter that is wider than the muffin tin hole
Your Chef
Danielle Ellis trained as a professional baker in France after a career in marketing. She has a passion for all types of bread and uses the techniques learned in France to make bread baking simpler and consistent. Now based in Gloucestershire, she specialises in training both online and in person. She’s also a food judge for the NFWI; World Bread Awards and Taste of the West Danielle is now teaching Italian Baking Classes sharing her tips and trips to create the perfect Italian style bread.
